Ingredients:
1 tbsp extra virgin olive oil
2 cups white onion chopped
1 tsp dried thyme leaves
1 1/2 tsp kosher salt
1 tsp freshly ground black pepper
3 tbsp Worcestershire sauce
1/3 cup chicken broth
1 tbsp tomato paste
1kg extra-lean ground chuck or beef
½ cup almond flour
2 eggs
1/2 cup sugar-free ketchup
Method:
Step 1
Preheat the oven to 160 degrees C. In a large skillet, heat olive oil over medium heat. Add the onions, thyme, salt, and pepper and cook over medium-low heat for about 5-7 minutes. Stir occasionally.
Step 2
Remove the skillet from the heat and add the Worcestershire sauce, chicken stock, and tomato paste. Mix everything together very well.
Step 3
In a large bowl, add ground beef, sautéed onion mixture, breadcrumbs and egg. Mix all well using a fork. It’s important to use a fork because it will allow the meat mixture to be fluffy and not dense. Do not mash the meat mixture.
Step 4
Transfer the meatloaf into a loaf pan covered with parchment paper.
Step 5
Spread sugar-free ketchup on top of meatloaf.
Step 6
Bake for about 1 hour and 10 minutes. Remove from the oven and spread more ketchup on top.
