Ingredients:

6 large eggs

1 cups shredded Mozzarella Cheese or cheddar

1/2 cup cottage cheese

1/4 cup cooked bacon crumbled

1/8 tsp salt

1/8 tsp black pepper

(Optional ¼ cup broccoli, red pepper, spinach, onion, your fav veggies)

Method:

Step 1

Prepare the saucepan – Add 1 cup water to a large saucepan with lid & bring water to boil with preparing eggs.

Step 2

Make the Egg Mixture – In a blender, add eggs, shredded cheese, and cottage cheese. Blend on high until smooth. Season with salt and pepper to taste.

Step 3

Add the mix-ins: bacon bits, broccoli, red pepper, spinach, or any of your favourite meats and veggies.

Step 4

Fill the silicone moulds with the egg mixture and cover with lid or tightly with aluminium foil to keep condensation away as the egg bites are cooking.

Step 5

Transfer the silicone moulds into the saucepan with the lid and cook for 10 mins.

Step 6

Remove the silicone egg mould from the saucepan and allow to cool for 5-10 minutes. Then turn the mould upside down on a plate and push out the egg bites. Enjoy !

How to store?

Refrigerator – place the cooled egg bites in an airtight food storage container and store them in the fridge for a couple of days.

Freezer – if you want to store them for a longer time, you need to put the egg bites in a ziplock bag or an airtight container and keep them for one month.

Then, if you want to reheat them, all you have to do is put them in the microwave for 30 seconds. If they are frozen, it will take 60-80 seconds.
