Ingredients:
1 tablespoon smoked paprika
1 teaspoon ground pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon cayenne pepper
4 boneless, skinless red snapper fillets (150gr ea)
1 tablespoon extra-virgin olive oil

Method
Step 1
Preheat grill to medium-high (200-230 degrees C). Combine paprika, pepper, onion powder, garlic powder, oregano, thyme, salt and cayenne in a small bowl. Brush fish all over with oil; sprinkle the seasoning evenly over both sides of fish, pressing to adhere.
Step 2
Oil the grill grates. Grill the fish, covered, until it flakes easily and a thermometer inserted in the thickest part registers 65 degrees C, 3 to 5 minutes per side. Serve with lemon wedges.
