Ingredients:

2 cups liquid egg whites

2 whole eggs

¼ cup skim milk

¾ tsp paprika

1 red capsicum, finely chopped

1 onion, chopped

4 bacon rashers, short-cut, rindless, chopped

2 cups baby spinach leaves, chopped

Pepper to season

50g cheese, mozzarella, grated

Method:

Step 1

Set oven at 190deg to heat. Using a blender or food processor blend eggs, egg whites, milk and paprika together. Transfer egg mixture to a medium mixing bowl. Add all chopped ingredients except the cheese and season with pepper. Mix well.

Step 2

Lightly spray a large 12 muffin baking tray with oil. Spoon mixture evenly into the individual muffin compartments. Top each one with cheese. Bake for 12-15 minutes until the egg mixture has set. Serve warm.
