Ingredients:
1 teaspoon butter, softened
1 teaspoon cider vinegar
1 teaspoon prepared mustard
1 teaspoon paprika
Dash pepper
2 boneless skinless chicken thighs (about 1/2 pound or 230g)
3 tablespoons soft bread crumbs
To make soft bread crumbs, tear bread into pieces and place in a food processor or blender. Cover and pulse until crumbs form. One slice of bread yields 1/2 to 3/4 cup crumbs.

Method
Step 1
In a large bowl, combine the butter, vinegar, mustard, paprika and pepper. Spread over chicken thighs. Place in a greased 11×7-in (28 x 18cm) baking dish. Sprinkle with bread crumbs.
Step 2
Bake, uncovered, at 205 degrees C for 15 minutes. Sprinkle with the cashews. Bake until chicken juices run clear and topping is golden brown, 7-12 minutes longer.
Step 3
Serve with your favourite choice of veggies.
