plate of zoodles and beef mince

Ingredients:

  • 1 brown onion
  • 1 garlic clove
  • 75 g celery stalks
  • 650 g ground beef
  • 75 g butter or olive oil
  • 2 tbsp tomato paste
  • 400 g crushed tomato
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp dried oregano or basil
  • 1 tbsp Worcestershire sauce
  • water (optional)

Zoodles:

  • 900 g zucchini
  • 2 tbsp butter or olive oil
  • salt or pepper

Method:

  1. Chop the vegetables finely. Saute in the butter or olive oil until soft and add the ground beef.
  2. Saute on high heat until everything has turned a nice colour. Add the remaining ingredients, stir and let simmer on medium high heat for 15 minutes.
  3. Lower the heat some more. Add water if the sauce is too thick. Let simmer for 20 minutes or more. The longer the sauce is allowed to simmer, the better the flavour.
  4. In the meantime, make the zoodles. Use a spiralizer, mandolin or peeler to make long, thin strips of zucchini.
  5. Heat a frying pan and toss them around quickly in butter or olive oil. A minute is enough to keep them from going too soft.
  6. Taste the sauce and see if you need to season further.
  7. Serve the noodles warm with the hot sauce on top. Feel free to sprinkle a little parmesan on top.
