Makes: 4 serves

Ingredients:

  • 1½ cups (350mls) liquid egg whites
  • 1 whole egg
  • 40g low fat feta cheese, crumbled
  • 2 firm peaches, medium, cut into thin slices
  • 1 (150g) punnet fresh blueberries
  • canola oil spray

Method:

Step 1: Lightly spray a 20cm nonstick fry pan with oil and heat. Whisk eggs and pour mixture into pan. Cover with lid and cook over low to medium heat until eggs are almost set, about 8 to 10 minutes.

Step 2: Drop a couple of blueberries into the egg mix. If they sink continue cooking for a few more minutes. Then repeat. If they sit on top, you can then add fruit to the egg flan.

Step 3: Arrange peach slices on top of the flan then add blueberries. Crumble feta over the top.

Step 4: Place fry pan under grill and heat till the cheese browns, and egg mixture is completely cooked approx. 3-4 minutes.

Step 5: Serve hot or cold. Add flaxseed meal or drizzle flax oil to obtain your essential fats and for extra protein add 2-3 tablespoons of low fat natural yoghurt! Enjoy. As you know Cheesecakes don’t come in one variety, rather there are many different ways by which you can flavour this non-cheesecake. Add different seasonal fruits!
